This is one of my favorite taco recipes EVER! Sure chicken tacos might sound a bit boring, but this recipe is light refreshing and will certainly make its way into your taco Tuesday rotation.

Skin is in

One of the key ingredients in this recipe is the skin. I realize it may be impossible to find skin on boneless thighs, but DON’T opt for skinless boneless chicken because it’s easier. 

Taking the bone out of the thighs is super easy. There’s only one bone and a tiny piece of cartilage that you have to remove. With a good sharp knife it takes like 5 minutes tops.

Mince Away

This recipe is kind of like a salsa or pico, so be sure you really mince your garlic and Serrano. Otherwise, you might bite into a larger chunk of chili pepper and wonder why we would torture you like that.  A small food processor works if you aren’t confident in your mincing skills.

Can’t Stand the Heat

If you are skeptical of hot peppers, substitute the serrano with a jalapeno. It won’t have as much kick, but I promise it will be just as tasty.

4 large boneless chicken thighs with skin on

1 teaspoon olive oil

Kosher salt

2 large garlic cloves minced

1 small Serrano Chile, finely chopped

Fresh-ground black pepper

½ lemon

½ lime

1.5 teaspoons mezcal or blanco tequila

2 tablespoons chopped cilantro

12 (4-inch) corn tortillas, warmed


Shredded lettuce

1 avocado, diced, sprinkled with salt


½ cup sour cream or full fat yogurt

1 teaspoon ancho chile

Juice from 1 lime


Preheat a cast-iron skillet over medium heat. Toss the chicken thighs with the oil. Starting with the skin side down, cook the thighs until the skin is very crisp. Turn and cook them until done. Sprinkle the crisp skin with a little salt. (The chicken may also be roasted, skin side up and uncovered in a 375 degree oven until well-done and golden-crisp.)

While chicken is cooking, mix up the crema. Stir together sour cream, ancho and lime juice. Allow to sit so that flavors meld. 

When the chicken is cooked, slice it thinly or dice it. Place it in a bowl and toss it with the garlic and serrano chile, 1 teaspoon of salt and a couple grinds of fresh pepper. Squeeze the lime juice and lemon juice directly over the chicken, add the mezcal, and stir in the cilantro.

Place spoonfuls of chicken in the warm tortillas, top with shredded lettuce, avocado and crema.
