I’m sure we aren’t the first people to think of this, but seriously why aren’t Irish spring rolls a thing? Corned beef instead of pork or shrimp, cabbage (a spring roll staple), carrots, some glass noodles and presto, you’ve got the perfect hand-held appetizer. Add a sauce of stone ground mustard, maple and horseradish for dipping and you have a killer starter. So obviously, St. Patrick’s Day doesn’t look the same as it has in years past. The parades are cancelled. The city’s best Irish pubs have limited seating (if they are open at all) and most of us are in a deep state of self-reflection about where we were 12 months ago when the world shut down. ⠀

Liz: I like to mess with things. Make this with a spicy simple syrup instead of a sugar cube to jazz it up a bit! ⠀

Jen: Yes, there are literally hundreds of recipes for a “classic” sazerac, but this recipe is by far one my favorites. It’s perfectly balanced, tastes amazing and takes the edge off quickly – if you know what I mean. ⠀
