Ingredients

1 can black beans, drained

⅔ cup black tahini

Zest and juice of 2–3 lemons (about ⅓ cup juice)

2 garlic cloves, chopped

⅓ cup olive oil

1½ teaspoons honey

1 teaspoon cumin (or more, to taste)

1 teaspoon kosher salt

Handful of chopped parsley or other herbs

Optional toppings: za’atar, sumac, pomegranate arils, nuts or seeds, and a swirl of EVOO
Instructions

Combine black beans, tahini, lemon juice, zest, garlic, honey, cumin, and salt in a high-powered blender.

With the motor running, drizzle in the olive oil until smooth.

Taste and adjust seasoning — more lemon for brightness, garlic for kick, or cumin for warmth.

Spoon into a serving bowl, swirl with extra virgin olive oil, and top with herbs or pomegranate for a little sparkle.
